Today in Greece is the so-called Clear Monday (Καθαρή Δευτέρα), which is the first day of Lent. It is a movable holiday that falls on the Monday of the seventh week before Orthodox Easter. It is also a day off, both in Greece and Cyprus.
The traditional lag of our work
The entire first week of Lent is often referred to as "Clean Week" and according to Greek customs, these days are devoted to general housekeeping. However, the main meaning of this holiday is spiritual change, mutual forgiveness and starting the fasting period with a clear conscience.
Whenever possible and if the weather is good, this holiday is spent by the Greeks in the open air. It is common practice to fly a kite. Today's spring aura was used, for example, by the inhabitants of Rethymno, who went for a walk along the streets of the old town or to the city beach, where some people were just doing kite flying or sports activities with children.

One of the most characteristic symbols of this holiday is lagana bread (λαγάνα). The tradition of baking this flat bread with the addition of sesame seeds is still cultivated in Greece and Cyprus. Although many housewives still prepare their own bread, the vast majority of Greeks buy lagana in local bakeries, which start producing this bread on the evening before Clean Monday.
Every year, bakers take up a kind of competition, trying to bake the largest decorative lags. This was also the case this year. A 4-meter long and nearly 2-meter wide lag was created in Chania. In Kissamos, a local baker baked a large Crete-shaped lag.
George Hairetakis, a baker from Kissamos, traditionally bakes a Crete-shaped lagoon every year.
